This blackberry parfait is a delightful raw vegan breakfast made with fresh blackberries, vegan yogurt and raw buckwheat groats. Garnish with fresh mint leaves.

Equipment

Ingredients
  

  • 150 grams blackberries (fresh)
  • 400 grams plain vegan yogurt (thick works best (cashew yogurt))
  • 6-8 tablespoons chia jam (I use chia jam)
  • 4 tablespoons raw buckwheat groats (for soaking)

Instructions
 

  • Soak the buckwheat groats for 4-8 hours (I soak mine overnight) in a bowl of water to soften. The water should easily cover the buckwheat by a couple of inches.
  • Next, rinse and drain the buckwheat groats thoroughly. They'll be slimy, this is normal. Just rinse them until they are no longer slimy. Set aside.
  • Layer up the parfait by adding 1 tablespoon of blackberry jam to the bottom of each glass. Next, add some blackberries followed by a layer of vegan yogurt. Top with a heaped tablespoon of buckwheat groats. The last layers are jam followed by a final layer of vegan yogurt.
  • Top each parfait with a couple of blackberries and a fresh mint leaf or two. Enjoy!

Notes

Once the buckwheat is rinsed spread them onto a piece of paper towel to absorb any excess water  and pat dry before using.
